100% single-vineyard Pipers River chardonnay produced in the traditional method by sparkling wine queen Natalie Fryar. Pale straw with a superfine, energetic bead and mousse. Notes of apple, white peach, nectarine and citrus fruits with underlying hints of clotted cream, sea spray, freshly baked brioche, clover blossom, dried shiitake, shortbread, creamed honey and crushed stone and shells. It's so expressive yet there is a laser-like focus and tension between fruit and the mineral-laden acidity, the flavours stretching out long on the finish. Such a beautiful wine.

Tasmania has become one of the most exciting sparkling wine regions in the world, and Bellebonne is a specialist producer dedicated entirely to traditional method sparkling wines from the island. The project was founded by Natalie Fryar, widely regarded as one of Australia’s leading sparkling winemakers. Working with carefully selected cool climate vineyards across northern Tasmania, she crafts wines that emphasise precision, finesse and long ageing on lees. The Blanc de Blancs focuses solely on Chardonnay, a variety that thrives in Tasmania’s maritime climate where long ripening seasons preserve acidity and aromatic purity.
Pale straw with brilliant clarity and an exceptionally fine bead, the bouquet is refined and layered. Lemon zest, green apple and white peach rise from the glass alongside notes of brioche, toasted almond and citrus blossom. There is a delicate chalky mineral note that adds lift and complexity.
The wine shows remarkable balance and finesse, combining crisp citrus and orchard fruit with vibrant natural acidity. Extended lees ageing contributes a creamy texture and gentle pastry complexity without overshadowing the purity of the Chardonnay fruit. The finish is long, elegant and mineral driven with lingering notes of lemon curd and toasted brioche.
It is superb with freshly shucked oysters, sashimi, lobster, tempura prawns or soft triple cream cheeses. With its fine structure and acidity, Bellebonne Blanc de Blancs will continue to evolve beautifully in the cellar for eight to twelve years, developing deeper brioche and nutty complexity.
