A 100% single-vineyard pinot noir from Pipers River produced in the traditional method, 2.5 years on lees. A beautiful salmon hue with a suggestion of copper. A vivid, energetic bead and mousse. The aromatic detail is on point with red apple, redcurrant, wild strawberries and raspberry with hints of shiitake broth, brioche, crushed stone and shells, cream, meadow flowers and some flinty tones. Savoury and precise, with a light textural component catching the eye as the flavours travel over the palate, stony, expressive and pure. What a beauty!

Sparkling rosé has become one of Tasmania’s most compelling wine styles, and Bellebonne has quickly established itself as a specialist producer devoted entirely to traditional method sparkling wines. The label was created by Natalie Fryar, one of Australia’s most respected sparkling winemakers, whose career has been dedicated to crafting wines with finesse, precision and longevity. Working with premium cool climate fruit from northern Tasmania, Bellebonne Rosé is produced in small quantities with extended lees maturation to build complexity while maintaining the freshness that defines the island’s sparkling wines.
Delicate salmon pink in the glass with a fine, persistent bead, the aromatics are vibrant and refined. Wild strawberry, raspberry and red apple rise from the glass alongside hints of rose petal, citrus blossom and subtle brioche. There is a gentle mineral freshness that reflects Tasmania’s cool maritime conditions.
The wine delivers both elegance and energy, with red berry fruit and crisp apple supported by bright natural acidity and a creamy mousse from traditional bottle fermentation. Lees ageing adds delicate pastry notes and textural depth while the finish remains clean, dry and beautifully balanced with lingering strawberry and citrus.
This style works wonderfully with smoked salmon, sushi, charcuterie, roast chicken or fresh seafood dishes. With its balance of fruit, acidity and fine structure, Bellebonne Rosé will continue to develop additional complexity over the next six to ten years in the cellar.
