2020 Arnaud Baillot Bourgogne Cote d’Or’ Blanc, Burgundy

Arnaud Baillot has quickly built a name in Beaune for thoughtful, small scale wines that respect both vineyard and vintage. Working as a négociant with close grower relationships across the Côte d’Or, he focuses on careful fruit selection and a gentle hand in the cellar, aiming for wines that show clarity and balance rather than heavy winemaking.

The Bourgogne Côte d’Or Blanc steps up in depth and detail, drawing fruit from within the more prized central band of Burgundy. Limestone soils and cooler exposures bring a classic profile, citrus and white peach layered with green apple and a subtle floral lift. There is a touch more generosity here than the Hautes Côtes bottlings, with a hint of almond and light spice from well judged oak.

The palate carries a bit more weight while still holding that Burgundian line. Fresh acidity keeps everything in check, giving shape to flavours that move from lemon curd and stone fruit into a lightly savoury finish. There is a quiet mineral edge running underneath, adding length and precision.

It is a versatile partner at the table. Roast chicken with thyme, grilled fish with beurre blanc, or pork with apple all work beautifully. It also handles richer seafood dishes with ease, scallops or lobster where that extra texture comes into play.
