Sourced from Rymill's older northern Coonawarra vineyards. Matured in French oak hogsheads (30% new) for 24 months. One smell/sip and you're in Coonawarra. Blackcurrant, tobacco and mint flavours with tips of violet and anise. Integrated cedar wood, too. It's fully ripe but that cool Coonawarra cabernet persona remains intact.

Rymill Classic Cabernet Sauvignon from Coonawarra is a quintessential example of what makes this South Australian region so revered for the variety. With its signature terra rossa soils and cool maritime climate, Coonawarra produces Cabernet with intensity, structure and unmistakable regional character. Rymill, a family-owned estate with deep roots in the region, consistently delivers wines that blend heritage with modern polish, and the Classic Cabernet is their flagship red for everyday enjoyment.
The fruit is estate grown, harvested from the heart of Coonawarra’s red soil strip, where warm days and cool nights help develop rich black fruit flavours while preserving bright acidity and fine tannin. The winemaking approach focuses on approachability without sacrificing depth: fermentation in stainless steel for freshness, followed by maturation in a mix of French and American oak to add subtle spice and structure.
In the glass, it opens with ripe aromas of blackcurrant, mulberry and plum, layered with notes of cedar, dried herbs, mocha and vanilla. The palate is medium to full bodied, with dark fruit, savoury spice, fine tannins and a clean, balanced finish. It’s a classic Coonawarra Cabernet with plenty of varietal definition and regional identity.
Perfect with grilled steak, roast lamb, or portobello mushrooms with rosemary and garlic. It drinks beautifully now but will hold well for five to seven years.
