Hilltops Shiraz has a way of combining sunshine ripeness with a cooler edge, and this single vineyard release from Barwang shows that balance beautifully. Set at elevation in southern New South Wales, the site sees warm days and crisp nights, building generous fruit while holding onto freshness and spice. The 2022 vintage leans into that clarity, giving a wine that feels both open and well defined.

Aromatics are vivid and layered, blackberry and dark plum up front, with blueberry and a lift of violet sitting just behind. There is a spicy thread running through it, cracked pepper, clove and a touch of anise, along with a subtle savoury note that keeps everything grounded.

On the palate it is medium to full bodied with a plush, flowing texture, but there is structure here too. Fine tannins and a line of acidity give the wine shape, carrying the fruit through into a long finish where spice, dark chocolate and a faint earthy edge linger.

Winemaking is handled with a focus on purity and balance, allowing the vineyard character to lead while oak adds depth and polish without overwhelming the fruit.

This is where it really comes alive at the table. Think slow braised lamb shanks with rosemary and garlic, sticky soy glazed pork ribs, or a charred flank steak with chimichurri. It also works brilliantly with smoky flavours, grilled chorizo, barbecued brisket or even wood fired pizza topped with spicy salami. For vegetarian options, go for miso glazed eggplant with sesame, a smoky black bean and chipotle stew, or roasted pumpkin with harissa yoghurt and toasted seeds, the spice and richness lock in beautifully with the wine.

Drinking well now, it will continue to build more savoury depth over the next five to eight years while holding its balance and energy.
