Deep ruby red colour. heady nose of crushed blackberries, blood plums and cola spices. Big and plush ripe black fruits on entry then lashings of sweet oak spices roll over the top. The Rosily Cabernet Sauvignon Organic from Margaret River is the estate’s flagship red, crafted from 100% estate-grown, certified organic fruit. Rosily Vineyard, established in 1994 and named for the French explorer Count François de Rosily, is a boutique, single-vineyard producer entirely focused on organics and sustainability. Every wine is made exclusively from their own vines, making this Cabernet a pure reflection of site and season.
Margaret River is world-renowned for Cabernet Sauvignon, thanks to its maritime climate, gravelly loam soils and long, temperate growing season. At Rosily, careful vineyard management and low yields deliver fruit of great concentration and balance. Winemaking is deliberately restrained: hand harvesting, small-batch fermentation in open fermenters, gentle extraction and maturation in French oak barrels. This approach emphasises structure and finesse while allowing the vineyard’s character to shine through.
In the glass it is deep crimson with garnet hues. The bouquet is elegant and complex, with cassis, mulberry and blackberry layered with bay leaf, cedar, tobacco, violets and a touch of dark chocolate. The palate is medium to full-bodied, with juicy black fruits framed by fine-grained tannins and bright natural acidity. Subtle savoury notes of graphite, cigar box and spice add depth, while the finish is long, persistent and poised – a hallmark of great Margaret River Cabernet.
Food pairings highlight its structure and classic profile: chargrilled ribeye, roast lamb with rosemary, venison, or vegetarian dishes such as mushroom and lentil stew. Aged cheeses like Comté or Parmigiano Reggiano also pair superbly. With 15 to 20 years of cellaring potential, the Rosily Cabernet evolves into a wine of profound complexity, developing tertiary layers of leather, truffle, earth and spice while maintaining its core of vibrant fruit.
