The Rosily Shiraz Organic from Margaret River is a refined, cool-climate expression of Shiraz that highlights both the elegance of the region and the estate’s commitment to organic viticulture. Rosily Vineyard, established in 1994 and named after the French explorer Count François de Rosily, is a fully certified organic, single-vineyard producer located in the heart of Margaret River. With all fruit grown and vinified on-site, the wines reflect a genuine sense of place and purity.

Margaret River’s maritime climate, with its warm days tempered by ocean breezes, is ideal for producing Shiraz of balance and finesse rather than sheer power. The gravelly loam soils over clay lend concentration and a fine mineral line, while careful vineyard management ensures vibrant fruit and natural acidity. Winemaking is minimal and focused, with open fermenters, gentle plunging and maturation in French oak, allowing the variety to express both fruit and spice.

In the glass it shows deep crimson with purple hues. The bouquet is perfumed and complex, with blackberry, plum and mulberry fruit lifted by white pepper, violets, cloves and a hint of dark chocolate. On the palate it is medium to full-bodied, with juicy dark fruits framed by fine-grained tannins and fresh acidity. Notes of spice, earth and savoury herbs build across the mid-palate, leading to a long, supple and elegant finish.

Food pairings play to its cool-climate savoury style: roast lamb with rosemary, duck breast with spiced plum glaze, chargrilled venison, or vegetarian options like roasted eggplant with cumin and herbs. Hard cheeses such as Manchego or mature cheddar also work beautifully. With 8 to 12 years of cellaring potential, the wine develops additional layers of leather, truffle and dried spice while retaining its fruit vibrancy.
