A raw, energetic expression of McLaren Vale Shiraz, this wine is built around Gemtree’s biodynamic philosophy and a desire to show fruit in its most natural form. Uncut comes from estate vineyards farmed as living systems, where cover crops, compost and lunar cycles are part of everyday practice. The warm Vale climate delivers deep flavour, but the farming focus is on balance, aiming for fruit with vitality rather than excess weight.
Winemaking is deliberately hands off. Fermentation is handled gently to preserve aromatics and texture, and the wine is bottled with minimal filtration, keeping its full personality intact. Oak plays a supporting role, adding structure without smoothing away the edges that make the wine distinctive.
Deep purple in colour, the aromas surge with blackberry, plum and blueberry layered with pepper, liquorice and earthy spice. The palate is full bodied and plush, with dark fruit wrapped in ripe tannins and lively acidity. Flavours of black fruit and savoury notes roll into a long, generous finish that feels both rich and vibrant.
