Sourced from high-altitude vineyards in the Upper Yarra, this wine is crafted using the traditional method, with extended time on lees to build texture, complexity and a fine, persistent mousse.
The base wine is fermented in stainless steel to preserve purity, then undergoes secondary fermentation in bottle. It is aged on lees for an extended period, often two to three years, giving the wine its delicate brioche and nutty notes without losing freshness or vibrancy.
The nose opens with citrus blossom, lemon curd, green apple and a hint of toasted almond. The palate is crisp and linear, with flavours of white peach, Meyer lemon and a touch of freshly baked pastry. There's a chalky mineral edge and lively acidity that give the wine structure and drive through the long, dry finish.
