The fruit is hand-harvested, fermented with indigenous yeasts, and aged on fine lees in a mix of stainless steel and old oak barrels. There is no new oak influence — just a gentle layering of texture and savoury nuance. The wine is bottled without aggressive fining or filtration, preserving its natural character and mineral backbone.
In the glass, it opens with aromas of green apple, lemon peel, white flowers, crushed stone and a faint hint of flint. The palate is linear and focused, driven by bright acidity and classic oyster-shell minerality. There’s a subtle creaminess from lees ageing, balancing the wine’s citrus edge with savoury complexity. The finish is long, clean and quietly powerful.
Food pairing: ideal with freshly shucked oysters, grilled scallops, poached chicken with tarragon, or a simple goat cheese salad. Also excellent with white fish and beurre blanc or a crab and fennel tart.
