2023 Olivier Leflaive Dents de Chien Saint Aubin 1er Cru, Burgundy

Olivier Leflaive is one of Burgundy's most respected names, with deep family roots in Puligny-Montrachet and a reputation for beautifully crafted Chardonnay. Since establishing his own business in 1984, Olivier has championed the distinctive character of individual vineyards across the Côte de Beaune. Dents de Chien is a particularly exciting Premier Cru, prized for its remarkable position and the finesse of its wines.

Perched high above the Grand Cru vineyards of Montrachet and Chevalier-Montrachet, Dents de Chien takes its name from the jagged limestone rocks that resemble dog's teeth. Its elevated position and stony soils produce Chardonnay with striking mineral character, while the generous 2023 vintage contributes ripe fruit and a beautifully rounded texture.

Bright pale gold with subtle green reflections. White peach, ripe pear and lemon oil mingle with acacia blossom, toasted almond and crushed limestone. The palate is concentrated yet elegant, with succulent orchard fruit, silky texture and lively citrus acidity. Gentle notes of hazelnut, fresh butter and chalky minerality carry through a long, refined finish.

Try it with pan roasted John Dory and a delicate shellfish sauce, handmade crab tortellini with chervil, or roasted Jerusalem artichokes with hazelnut and sage. Its combination of richness and freshness also makes it a wonderful partner for a classic cheese soufflé.

Cellaring: Drink 2027 to 2038. A beautifully structured Premier Cru that should reward several years in the cellar.
