Rob Dolan White Label Pinot Noir from the Yarra Valley is a vibrant, aromatic expression of cool-climate Pinot made to capture fruit purity, regional character and texture. This wine is sourced from select sites across the Upper and Lower Yarra, where elevation, soil variation and cool nights help build complexity and natural acidity. It’s a more serious step up from their True Colours range, offering extra depth, savoury detail and subtle oak influence, while remaining approachable.
Winemaking focuses on small-batch fermentation, with some whole bunch included for spice and structure. After fermentation, the wine is aged in French oak (around 15 to 20 percent new) to integrate tannin and lift the aromatics without overt oak imprint. It’s bottled with minimal handling to retain freshness.
In the glass, it shows lifted aromas of red cherry, raspberry, rose petal and dried herbs, with earthy undertones and a gentle flicker of spice. The palate is medium-bodied, silky and bright, with fine tannins, subtle oak and a long, savoury finish. It’s a wine that balances fruit generosity with tension and finesse.
Food pairing: Excellent with duck and cherry glaze, roast chicken with thyme, mushroom risotto or grilled salmon. For cheese, try a washed rind or mild soft-ripened style.
