Rob Dolan True Colours Pinot Noir Rosé from the Yarra Valley is a fresh, vibrant, and delicately structured pink wine that captures the crisp, cool-climate character of its region. Made entirely from Pinot Noir grown across select Yarra Valley vineyards, this is a dry rosé crafted in a pale, Provence-inspired style but with a distinctly Yarra twist — more red fruit and gentle savouriness, all backed by clean acidity.
The fruit is picked early to preserve acidity and delicacy, with minimal skin contact to give the wine its pale salmon colour. Fermentation occurs in stainless steel to maintain freshness and aromatics, and the result is a crisp, refreshing rosé that’s all about fruit purity, texture and drinkability.
In the glass, it opens with aromas of wild strawberry, raspberry, watermelon rind and a hint of rose petal and citrus zest. The palate is dry, light and finely balanced, with crunchy red fruit, bright acidity, and a clean, mouth-watering finish. There’s just a whisper of texture that makes it food friendly without sacrificing its easygoing charm.
Food pairing: Ideal with grilled prawns, Vietnamese rice paper rolls, tomato and burrata salad, or lightly spiced charcuterie. Also great with goat cheese or a simple Margherita pizza.
Cellar potential: Best enjoyed young and fresh within 1 to 2 years of vintage while the fruit is at its peak.
