The Baxendale vineyard sits more than 800 metres above sea level, making it one of the highest and coolest Chardonnay sites in the country. Its ancient volcanic soils, chilly nights, and long growing season create fruit of remarkable purity, tension, and aromatic lift.
Adrian Rodda handles the grapes with a gentle, minimalist touch. Whole bunch pressing, wild fermentation in fine French oak, and extended time on lees build texture without taking away the wine’s natural brightness. The result is a Chardonnay that combines precision with depth, delivering a style that echoes top tier cool climate wines while maintaining a distinctly Australian sense of place.
In the glass it shows pale straw with green glints. The aroma is refined and layered with white peach, citrus zest, jasmine, and struck flint along with a touch of almond and nougat from barrel ageing. The palate is long, taut, and beautifully textured, offering stone fruit, lemon curd, and subtle spice carried by vibrant acidity and a clean mineral line. The finish is elegant, savoury, and persistent.
It pairs perfectly with roast chicken, scallops, creamy seafood dishes, and dishes featuring herbs, lemon, or subtle spice. While wonderfully expressive in its youth, it will also cellar for eight to ten years, gaining richness and gentle nuttiness with time.
