Clonakilla Hilltops Shiraz from the Hilltops region is one of Australia’s most consistently admired cool climate Shiraz releases, celebrated for its perfume, finesse and quietly powerful structure. Clonakilla sources the fruit from carefully selected vineyards around Young, sitting high on the deep, fertile granitic soils and dark basalt loams of the southern NSW high country. The region’s elevation, crisp evenings and long warm summer days shape Shiraz with striking vibrancy, lifted aromatics and sleek tannins. It has long been regarded as a benchmark expression for what high altitude NSW Shiraz can achieve.
The fruit is hand picked in small parcels and trucked back to the Clonakilla cellar where gentle handling is key. Whole berries and a thoughtful proportion of whole bunches lend aromatic lift, spice and a silky frame. Fermentation is spontaneous with wild yeasts to build layers and texture. Maturation unfolds in French oak, largely seasoned, adding savoury depth without overshadowing the purity of the fruit. The aim is always elegance over excess, clarity over weight.
The aromatics are vivid and detailed, offering blueberry, dark cherry and ripe plum alongside violet, black pepper, dried rose, anise and a distinctive savoury signature reminiscent of smoked herbs and warm granite. With time in the glass, notes of mulberry, cocoa, clove and subtle cedar expand the bouquet beautifully.
The wine sweeps across the palate with brightness and drive. Dark berry fruit sits at the heart, carried by fine, powdery tannins and a cool mineral edge. Flavours of blackberry, cherry liqueur, plum skin, pepper and subtle spice evolve gradually, guided by clean natural acidity. There is both generosity and restraint, the mid palate supple yet structured, finishing with long, fragrant persistence and a quiet savoury depth. Five to eight years in the cellar will see complexity deepen toward leather, spice and forest tones.
This style is exceptional with chargrilled lamb cutlets, venison backstrap, barbecued beef, roast duck, mushroom dishes, charred vegetables, hard cheeses and richly spiced Middle Eastern cuisine.
