Not yet bottled. They are at the back end of the valley which was much less hailed than the entry. Pale in colour, white fruit bouquet and on the palate, slightly soft and lactic on the palate but that may be cleaned up before bottling. This has not been fined or filtered yet. Daniel Dampt is part of a long established Chablis family based in Milly, just west of the town of Chablis. The domaine has grown into an impressive collection of vineyards across Chablis and several important Premier Crus, with sons Vincent and Sébastien now closely involved. The house style is refreshingly classical, putting Chardonnay, limestone and freshness ahead of flashy winemaking.

Côte de Léchet sits on the left bank of the Serein near Milly, alongside the better known Vaillons sector. Its steep, well exposed slopes are rich in Kimmeridgian limestone and fossil laden marl, giving Chardonnay a particularly taut, mineral personality. Côte de Léchet is often one of the more incisive Premier Crus, and the small, cool 2024 vintage plays beautifully to that strength, emphasising precision, citrus and stony tension.

Pale straw with green flashes. Lemon zest, crisp pear and green apple lead into white peach and grapefruit, followed by oyster shell and crushed chalk. Fresh fennel and almond add subtle savoury detail. The palate is taut and energetic, with citrus and orchard fruit driven by bright acidity. Preserved lemon, chalk and a distinctly saline note build through the long, dry and mouthwatering finish.

Kingfish crudo with finger lime and olive oil is beautifully placed beside all that citrus and mineral bite. Fresh oysters, steamed prawns, grilled whiting or zucchini flowers stuffed with ricotta would keep things equally clean and lively. Côte de Léchet likes food with precision rather than a great blanket of cream.
