It’s quite ridiculous how good Sauvage is in all sorts of vintage conditions, although the warmer ’24 does suit the variety. However, this is about building complexity, not simply a varietal wine. An amalgam of delicious flavours – from lime and lemon juice, zest and curd to fresh herbs, stone fruit, smoked bacon and lots of nutty/creamy lees and barrel fermentation flavours ... yum yum yum. There’s texture, tangy acidity and excellent length.

Few regions in Australia produce Sauvignon Blanc with the clarity and balance of Margaret River, and the Sauvage bottling from Domaine Naturaliste highlights this beautifully. The winery was founded by Bruce Dukes, a highly respected winemaker and geologist whose understanding of the region’s soils plays a central role in the wines. Drawing fruit from carefully selected vineyards across Margaret River, Sauvage is crafted to emphasise purity, natural acidity and the coastal freshness that defines the region.

Pale straw with a bright green hue, the aromatics are vibrant and expressive. Passionfruit, lime and grapefruit leap from the glass, followed by notes of gooseberry, fresh herbs and a subtle mineral edge. A gentle floral lift adds elegance and freshness.

The wine shows lively energy and precision, with citrus and tropical fruit supported by bright natural acidity. Flavours of lime, green apple and passionfruit flow through the wine, while a crisp mineral backbone keeps everything focused and refreshing. The finish is long and clean with lingering citrus and herbal notes.

Fresh oysters, grilled prawns, goat cheese salads or Thai inspired dishes all work beautifully with this style. Best enjoyed over the next three to five years while its bright fruit and vibrant acidity are at their peak.
