From one of Burgundy’s most established houses, the Drouhin family brings a long, meticulous approach to Chablis through their Vaudon estate, a dedicated domaine focused entirely on this northern outpost. Farming is organic, vineyard work is careful and restrained, and the aim is always to let those Kimmeridgian limestone soils speak clearly. It is classic Chablis through and through, but with the quiet polish that Drouhin consistently delivers.
The 2024 vintage shows a lovely balance of freshness and ripeness. Citrus leads with lemon zest and a squeeze of lime, followed by green apple and a subtle hint of white peach. There is that unmistakable mineral thread running underneath, oyster shell and wet stone, giving the wine its backbone and sense of place.
The palate is clean and finely drawn, with bright acidity providing drive and length. Flavours stay in the citrus and orchard fruit spectrum, finishing dry with a saline edge and a gentle touch of flint that lingers. It is precise and refreshing, yet not thin, there is enough texture to round things out.
This is a natural partner for seafood. Fresh oysters, sashimi, grilled prawns or a simple piece of pan fried fish with lemon all work beautifully. It also pairs well with goat’s cheese or lighter chicken dishes where the acidity can lift the flavours.
Drink it young to enjoy that vibrancy and clarity, or cellar for three to six years as it develops a little more roundness and subtle honeyed complexity while keeping its mineral core.
