Paringa Estate Riesling from the Mornington Peninsula is a finely etched and beautifully aromatic white that showcases the precision and purity that cool-climate Riesling can achieve in this maritime region. Produced by winemaker Lindsay McCall at the acclaimed Paringa Estate in Red Hill South, it reflects both the meticulous vineyard work and the restrained, textural style that has made the estate one of Victoria’s most awarded wineries.

The vines are planted on north-facing slopes of volcanic red basalt soils, which retain warmth and enhance ripening while preserving natural acidity. The cool, breezy conditions of the Mornington Peninsula encourage slow, even maturation, allowing the grapes to develop delicate aromatics and vibrant tension. The fruit is hand picked and gently pressed, with fermentation in stainless steel at cool temperatures to preserve freshness and precision. A short time on fine lees adds texture and complexity without diminishing the wine’s crystalline character.

In the glass it gleams pale straw with green hues. The aroma is vibrant and pure, offering lime zest, green apple and jasmine with hints of white peach, mineral and wet stone. The palate is dry and finely structured, combining citrus and orchard fruit with a chalky texture and mouthwatering acidity. There’s a beautiful interplay of tension and delicacy, finishing long and refreshing with a touch of saline minerality.

It pairs perfectly with oysters, sashimi, Thai salads, or grilled prawns, and it’s equally at home with goat cheese, pork belly, or lightly spiced dishes. Delicious in its youth for its energy and clarity, it will evolve gracefully for up to ten years, developing honeyed, toasty depth while maintaining its vibrant core.
