Give this one grilled king prawns with burnt butter and lemon, roast chicken with tarragon, crab linguine, scallops with cauliflower purée or a bubbling Comté and leek tart
A definite lime green tint to the colour. Mildly reductive without hiding the fresh fruit which has a lime blossom character. Good tension here, a more compact wine than the regular Bourgogne, possibly with greater length. They lost 70% to frost, more than mildew, here. Drink from 2027-2029. Tasted Oct 2025.
87-88 points Jasper Morris MW, Inside Burgundy
Pierre-Yves Colin-Morey has become one of Burgundy’s cult names, with tiny allocations chased by collectors around the world. Based in Chassagne-Montrachet, Pierre-Yves and Caroline Colin established the domaine in 2005, building an extraordinary reputation for whites of tension, energy and unmistakable vineyard character. Even at Bourgogne level, the same obsessive attention applies, making this Hautes-Côtes de Beaune a particularly clever way into the PYCM cellar.
The higher vineyards of the Hautes-Côtes de Beaune sit above the famous Côte d’Or slope, where increased elevation and cooler nights encourage slower ripening and naturally bright acidity. That cooler terroir is particularly well suited to the 2024 vintage, producing a wine with freshness, citrus drive and plenty of mineral bite. Colin-Morey’s famously restrained élevage adds texture and his signature smoky edge without burying the fruit.
Pale gold with flashes of green, the nose opens with lemon zest, white peach and crisp pear, followed by grapefruit, white flowers and a whisper of struck match. With air come salted almond, crushed limestone and a touch of fresh sourdough. The palate is taut and energetic, with citrus and crunchy orchard fruit wrapped around lively acidity and a chalky, saline core. A little creamy texture fills the middle before a long finish of preserved lemon, wet stone and toasted almond.
Give this one grilled king prawns with burnt butter and lemon, roast chicken with tarragon, crab linguine, scallops with cauliflower purée or a bubbling Comté and leek tart. It would also be dangerously good with a plate of gougères straight from the oven — preferably while deciding which PYCM bottle you’re going to open next.
Cellaring: Drink from 2026 to 2035.
