The fruit is handpicked and whole bunch pressed to preserve delicacy, then wild fermented in a combination of stainless steel and seasoned French oak barrels. Partial malolactic fermentation and time on lees add subtle creamy texture and savoury nuance without weighing down the wine’s vibrant acid line and citrus driven core.
In the glass, it opens with aromas of lemon zest, white nectarine, oyster shell, and a subtle hint of toasted cashew. The palate is fresh and lively with stone fruit, citrus and a whisper of spice, finishing crisp, mineral and refreshing.
