Bring on freshly shucked oysters, scallops with lemon butter, grilled king prawns, crab linguine or roast chicken with tarragon.
A classic, pure, elegant Fourchaume. With the lower yields this shows plenty of depth and concentration but is quite restrained at the moment. Loads of potential. Crisp, mineral finish.
17+ points Andy Howard MW for Jancis Robinson
Domaine Séguinot-Bordet is one of Chablis’ historic family estates, with the family’s roots in the region stretching back to the late 1500s. Today Jean-François Bordet continues that remarkable lineage from Maligny, crafting Chablis with purity, generosity and a clear sense of place. Fourchaume is one of the appellation’s most celebrated Premier Crus, lying close to the Grand Cru hillside and renowned for combining classic Chablis minerality with a little extra flesh and generosity.
The 2025 vintage brings youthful brightness and energy, while Fourchaume’s favourable exposure encourages excellent ripeness. Beneath that fruit lies classic Kimmeridgian terroir — ancient limestone and fossil-rich marl that gives Chablis its distinctive chalky, saline personality. The result is a Premier Cru with plenty of immediate charm but enough structure to develop beautifully in bottle.
Pale gold with green highlights, the nose opens with lemon zest, green apple and white peach before revealing citrus blossom, oyster shell and fresh almond. With air come grapefruit oil, wet chalk and a gentle smoky note. The palate is juicy and energetic, with ripe citrus and orchard fruit carried by bright acidity and a cool mineral core. Fourchaume’s natural generosity fills out the middle before a long, mouthwatering finish of preserved lemon, sea spray and crushed stone.
Bring on freshly shucked oysters, scallops with lemon butter, grilled king prawns, crab linguine or roast chicken with tarragon.
Cellaring: Drink from 2027 to 2037.
