Founded in 1860 by Edmond de Ayala, Champagne Ayala has long been one of the region's most elegant and refined houses. Located in Aÿ, at the heart of Champagne's Grand Cru vineyards, Ayala built its reputation on purity, freshness and precision, favouring lower dosage levels long before the style became fashionable. Since joining the Bollinger family group in 2005, the house has undergone a remarkable renaissance, with Cellar Master Julien Gout leading a focus on terroir expression and meticulous blending.
Rosé Majeur is the signature rosé of the house, crafted from a blend dominated by Chardonnay, supported by Pinot Noir and Meunier, with the addition of carefully selected red wine from some of Champagne's finest crus. The high proportion of Chardonnay gives the wine its distinctive elegance and freshness, setting it apart from many richer, Pinot Noir driven rosé Champagnes. Extended lees ageing contributes complexity while preserving the house's trademark precision.
A beautiful pale salmon pink colour is enlivened by a stream of fine, persistent bubbles. The bouquet opens with aromas of wild strawberry, raspberry and redcurrant, intertwined with notes of pink grapefruit, white flowers and freshly baked brioche. The palate is vibrant and beautifully balanced, combining crisp red berry fruits with citrus zest and subtle pastry notes. A fine chalky minerality runs through the wine, providing energy and structure, while the finish is long, dry and refreshingly elegant.
Perfect with freshly shucked oysters, tuna tartare, grilled prawns, smoked salmon blinis or a beetroot and goat's cheese salad. Equally suited to celebrations or simply enjoyed as an aperitif, it offers a wonderful balance of sophistication and drinkability. While delicious upon release, it will continue to develop added complexity over the next five to seven years.
