It would be hard to find a more crowd-pleasing rosé fizz than this. A little sweet, to be churlish. Crushed raspberry, sour strawberry, musk stick, orange verbena and ume dragged long by chalky acidity and gently grippy seams. The time on lees, well portioned to promote the fruit rather than overwhelm it.

Altair Brut is predominantly made from Pinot Noir with a small percentage of Chardonnay grapes added for finesse. The fruit is selected from the cool south-facing slopes high in the Adelaide Hills. Sweet strawberry, cherry and spice aromas follow through to the palate, where the lively bubbles add lift and balance to these fruit flavours. This wine has wonderful length and supple mouth feel.
